So What's a Red Velvet Cake?
Hugely popular in the US, but not as familiar here in New Zealand, a Red Velvet cake is a rich, moist, sweet cake with dark red or red brown colour. It's somewhere between chocolate and vanilla in flavour, topped with creamy white icing.Traditionally a Red Velvet cake has a cream cheese icing, so never to meddle with something that works well, we have kept to tradition. Our vanilla cream cheese based icing (similar to the popular carrot cake icing) is coated with a generous sprinkling of white chocolate flakes.A red velvet cake was a signature desert at the Waldorf-Astoria Hotel in the New York during the 1920s. In Canada it became a signature dessert of Eaton’s department store in the 1940s and 1950s. Promoted as an “exclusive” Eaton recipe , with employees who knew the recipe sworn to secrecy. A resurgence in the popularity of this cake is attributed to the 1989 film Steel Magnolias in which the grooms cake another southern tradition is a red velvet cake made in the shape of an armadillo.
